Making Tea 4 – Making Billy Tea the Australian Way

This is a traditional way of making tea in the Australian outback. A driver would be forced to drink water wherever he could find it by hand with a flock of sheep or a traveling shearer. Tea is a great way to drink water and the billycan reduces tea making to absolute simplicity.

The billy itself is simply a metal cooking pot with a flameproof lid and a bucket handle. Boil water in a pot and brew tea. Choose from 1-2 liters for the family, but for a larger collection you will need a bill of 10 liters or more. The exterior will soon darken, but the interior will be clean and shiny, adding to the authenticity.

When you’re backpacking abroad, you don’t carry fresh milk. It is traditional to taste billy tea with canned condensed milk, but not everyone likes the taste. You will need:

  1. Strong black tea (any, preferably fresh)
  2. Appropriately sized Billycan
  3. Water (preferably clean and fresh)
  4. Bonfire, and put a billy somewhere
  5. Tin mugs (250 ml or larger)
  6. Gum leaves (optional)
  7. Milk, sugar or condensed milk, if available.

How to do it:

  1. Fill the Billycan with water: at least 250 ml per person.
  2. Cover with a lid and put on fire to boil.
  3. When the water boils, turn off the heat by lifting the handle with a stick and remove the lid. Be careful – everything is very hot.
  4. Sprinkle tea over the water: a handful of family billy, a few handfuls of large.
  5. Drop the gum leaf for a special taste (optional).
