2 cloves of garlic
1 tbsp. paprika

salt and pepper
Discard the woody ends of the asparagus and cut the remainder into short pieces
and boil in boiling water for 2 minutes. Drain well. Heat the oil
in a flameproof pan and toast the bread and garlic until toasted.
Add paprika, cumin, vinegar, and a tablespoon of water to a blender
and salt and pepper. Fry the dried asparagus in oil for 5 minutes.
Add the mixture from the blender and boil for about 15 minutes. until asparagus
tender. Add more water if necessary. The sauce should be thick, but not dry.
Break one egg at a time over the cooked asparagus.
sprinkle with paprika and put in the oven until the egg is set.
Serves 4 as a starter or side dish, good with fish.
1 kilogram of asparagus
3 tbsp. butter
50 gr. grated cheese
1 tbsp. chopped onion
50 gr. chopped ham
2 tbsp. flour
220 ml. milk
salt and pepper
Cut off the thick ends of the asparagus, tie into bundles and cook standing up
steep in plenty of salted water until tender, approx. 10 minutes.
Drain well and place in a greased bowl.
Melt the butter and fry the onion and ham for a few minutes. Mix the flour,
add milk and cook slowly until thickened. Season with salt and pepper.
Pour the sauce evenly over the cooked asparagus and sprinkle with grated cheese.
Place in a hot oven under the grill until the top is crisp or brown
Baked eggs with asparagus.
100 grams of asparagus tips.
100 grams of ham
2 tablespoons butter
4 eggs, well beaten
salt and pepper.
Blanch the asparagus tips in boiling water. Slice the ham. Melt the butter
in a frying pan and fry the ham and asparagus tips for a few minutes.
Add the beaten egg along with the salt and pepper and mix on low
heat until eggs are set.
Serves a light dinner or lunch with 2 loaves of bread.
